Recipe: Croissant Berry Pudding

The Croissant Berry Pudding is a warm and creamy treat found at Sunshine Seasons in the Land Pavilion at Epcot. It’s only available for breakfast, and if you struggle to get up early (like me), or are far away from the parks (also me), you might want to recreate it at home.
Luckily, our friends Joe and Ashley from @SeeYaReelSoon provided us with a recipe and instructional video for their aptly named, “Yummy in my Tummy.”
Croissant Berry Pudding
Ingredients:
3 packs of croissants
6 large eggs
3 cups heavy cream
3/4 cup sugar
1 tablespoon vanilla
1 pack of blueberries (could add raspberries or blackberries too!)
Instructions:
Mix cream, vanilla, eggs (mixed in another bowl), and sugar. Whisk. The longer the better!
If you’re making your own croissants, spray a baking sheet, roll out croissants, and bake as directed (If you bought pre-made ones, skip to step 3).
Get a 16 x 9 glass baking pan. Cut croissants into thirds to cover the whole pan.
Sprinkle in your desired amount of blueberries (and/or other berries).
Use a soup ladle to gently and evenly add the liquid mixture to the pan.
Cover with aluminum foil and bake at 350º for 40 minutes.
When the timer is done, take the foil off the top and continue baking uncovered for 15 minutes, or until the croissants are golden brown.
Now, cover the pan again and let sit for 15-30 minutes. It’s okay if you can only wait 5 minutes for it to cool with the smell!
And voilà, now you have some “yummy in my tummy,” perfect for breakfast in bed.
