Recipe: Parwan Nutricakes
Savory snack cakes served with sriracha mayo.
Parwan Nutricakes are a delicious vegetarian snack that will fuel you up for any galactic adventure! They are easy to make at home and taste great paired with a sriracha mayo dipping sauce.
Parwan Nutricakes
Yields 8 servings
Ingredients:
1 can chickpeas, drained
1 clove garlic, minced
1 teaspoon cumin
½ teaspoon salt
½ teaspoon pepper
¼ teaspoon cayenne
1 egg
¼ cup flour
2 tablespoons olive oil
Mayonnaise (for dipping sauce)
Sriracha (for dipping sauce)
Instructions:
Add chickpeas, garlic, cumin, salt, pepper, and cayenne to a food processor and pulse a few times.
Add an egg and blend until smooth.
Gradually add in the flour, pulsing until combined.
Add olive oil to a frying pan over medium heat.
Once the pan is heated up, spoon some of the mixture into the pan, then smash it down with a flat spatula. Repeat until you run out of room in your pan.
Flip the cakes occasionally and cook until evenly browned on both sides. Remove from heat.
Combine mayonnaise and sriracha to make a spicy mayo dipping sauce and add a sprinkle of cayenne for garnish.
Serve the sauce on the side of the Nutricakes and enjoy!
