Recipe: Disney Springs Pomegranate Mimosa and Spritz

This sparkling beverage pair is the perfect cocktail to serve at your next holiday brunch or Christmas morning gathering. Featured at Vivoli il Gelato in Disney Springs, these drinks combines the light, bubbly flavor of Prosecco with the sweet and tart flavor of pomegranate two ways.
Pomegranate Mimosa
Yields 1
Ingredients:
Pomegranate sorbet
Prosecco
Orange Juice
Pomegranate arils (for garnish)
Instructions:
Scoop 1 scoop of pomegranate sorbet into a champagne flute.
Fill half the glass with prosecco.
Top the rest of the glass off with orange juice.
Garnish with a few pomegranate arils

Takeaway:
Both of these versions turned out delish and festive. It would be easy to set out a mimosa bar for guests or even make pitchers to serve. I had a bit of a hard time finding pomegranate sorbet and considered substituting with blended Outshine Pomegranate Fruit Bars. For the pomegranate arils, you could buy a whole pomegranate or a cup of POM.
